Loaded Baked Potato 

Ingredients

  • Russet potato, medium to large
  • 1/2 cup cottage cheese or plain Greek yogurt
  • Ready-made seasonings, such as Everything but the Bagel

Directions

  • Wash potato, use fork to add holes for steam release, and loosely wrap in a paper towel.
  • Microwave for 4 to 5 minutes or until potato is baked through. 
  • Slice in half and top with cottage cheese and seasonings.
